Pu-erh oat cookies

Image 1. Click to open in original size.

Here's my favorite cookies, Pu-erh oat cookies. The pu-erh gives the cookies extra depth. They have just teh right texture and are super easy to make

Ingredients for about 15 to 20 pieces

¾ dl of brown sugar

¾ dl strong pu-erh (the brewed drink)

¾ dl oil

2 tsp vanilla sugar

2 tablespoons salt

1 dl coconut flakes

½ dl buckwheat flour or 1 dl graham flour

½ dl soy flour

2 dl large oatmeal

½ dl raisins

Put the oven at 200 degrees and make your pu-erh twice as strong as you normally do. I usually use pu-erh superior. Let the Tea cool down slightly

Mix the first five ingredients.

Add the other ingredients and mix.

Put about 1-2 tablespoons of the batter in small clicks on a oven tray with baking paper, smooth the batter so they get flat and round.

Bake in the middle of the oven for 10-15 minutes.

They look very tasty. Good thing I read through the whole recipe. In the ingredients part I thought it meant to use 3/4 dl of pu-erh Tea leafs. :-)

Best regards, Niklas 🎈
